For me, when it comes to carbs, potatoes reign supreme. I simply adore them. To me, they are comfort, fuel, and joy – all rolled into one.

These days, with all our adventures in house hunting, there’s been many a night when all I want to do is plop down on the couch with a big bowl of roasted potatoes and forget about everything else.

This recipe relies heavily on the convenience of The Little Potato Company Creamer Potatoes. They cook quickly because of their small size and you don’t have to peel or wash The Little Potato Company Dynamic Duo bagged Creamer potatoes before adding them to the delicious tomato spiced sauce that is the base of this Potato Shakshuka.

It does involve a little bit of prep work in slicing and dicing tomatoes, onions, ginger, and garlic – for the tasty sauce. But the resulting dish is well worth it.

What are the ingredients to make this potato shakshuka?

Minus salt and pepper, you need only 9 ingredients to make this dish, and they are:

  1. Olive oil,
  2. Red onion,
  3. Garlic cloves,
  4. Piece of ginger,
  5. Large tomatoes,
  6. Coriander,
  7. Smoked paprika,
  8. Turmeric, &
  9. Eggs.

And an optional garnish of Cilantro and chili flakes.

This potato shakshuka can be enjoyed for breakfast, lunch, or dinner. I woke up late one Sunday and made this potato shakshuka for a late brunch. And, then we had the leftovers for dinner.

Ingredients

  • 2 tbsp oil
  • 1 red onion
  • 4 garlic cloves
  • 1 inch piece of ginger
  • 5 large tomatoes
  • 3 tsp coriander
  • 2 tsp smoked paprika
  • ½ tsp turmeric
  • 3 eggs
  • Salt and pepper to season
  • Cilantro and chili flakes to garnish
  • 1.5 lb The Little Potato Company Dynamic Duo bagged Creamer potatoes

Instructions

  1. Preheat oven to 375 degrees.
  2. Peel and chop the onion, garlic and ginger.
  3. Place a large, oven safe pan on the stove top with 2 tbsp oil in it.
  4. Add the chopped onion in the pan and saute 5 minutes.
  5. Add in the ginger and garlic and saute another 5 minutes.
  6. While the garlic and ginger are sauteing, chop the tomatoes and add them to the pan along with the coriander, smoked paprika, and turmeric.
  7. Then open the package of potatoes and add them into the pan and spread them.
  8. Place the pan in the oven and bake at 350 for 25 minutes.
  9. Remove the pan from the oven (do not turn off the oven) and move the potatoes aside to make 3 “holes” and break the eggs into the holes.
  10. Place pan back in the 350 degree oven and bake 10 minutes.
  11. Remove from the oven and season with salt and pepper and garnish with chopped cilantro and chili flakes as desired.

Notes

*You can add a can of drained beans or canned lentils to this shakshuka or enjoy it as is.
