Only six ingredients in this cabbage and sausage recipe and they are all packing lots of flavors. It took me a few tries to get the perfect flavor combination in this recipe but it’s perfect now. The great thing about it is it’s a one-dish dinner the whole family will enjoy.

Ingredients

  • 1 lb. smoked sausage
  • 1 can diced tomatoes with chilies (Rotel)
  • 1 cup brown rice (substitute white if needed)
  • 1/2 medium head of cabbage, chopped
  • 2 tsp. Old Bay seasoning
  • 1 (15 oz.) can chicken broth

Directions

Step 1

Take out the largest skillet you have with high sides. Mine is like this one that holds over 5 quarts. If you don’t have a large enough skillet, use your dutch oven.

Chop the cabbage into bite-size pieces. Rinse in a colander and let it drain while you chop the sausage.

Chop the sausage into bite-size pieces with a sharp knife.

I usually buy smoked sausage for this meal but you can also use kielbasa sausage, Italian sausage, turkey sausage, polish sausage, chicken sausage, andouille sausage, or whichever flavor you prefer. The kind of sausage you use is your choice. We like the smoky flavor sausage.

Step 3

In a large skillet, bring the chicken broth and tomatoes to a low boil on medium-high heat, stirring occasionally. Then add the Old Bay seasoning and stir. Old Bay is my favorite cajun seasoning and I also use it in my Crabmeat Stew recipe.

Step 4

Add the cabbage to the mixture in the skillet and simmer on low for about 30 minutes or until the cabbage is tender.

Step 5

Stir in the sliced sausage and rice and simmer on low with the lid on until the rice is done, about 20-30 minutes. Brown rice takes longer to cook than white rice.

Because rice will absorb the liquid, there is a possibility you may need a little more liquid before adding the rice. You can use water or more chicken stock, whichever you have. Let the liquid come back to a boil before adding the sausage and rice.

Once the rice is tender, this delicious cabbage and sausage dinner is ready to serve! Because it is a complete meal in one pan, no need for sides. Add your favorite dinner rolls or cornbread if you like.
